Stir Fried Peat Shoots

Ingredients
- 2 Tbs oil sesame oil would be good
- 3-4 cloves garlic smashed (or use 4 chopped garlic scapes)
- 1 lb pea shoots thick stems removed, torn into 2" pieces
- salt
- 2 whole dried red hot chiles optional

Instructions
- Heat oil in a large wok or skillet over med-high heat. Add garlic and chiles (optional), cook until garlic is golden, about 30 seconds.
- Add pea shoots and cook, tossing often, until stems are crisp-tender and leaves are wilted. This should take 1-2 minutes; season with salt. Serve immediately.
