Quinoa Kale Tomato Corn Salad
Remember to “massage” the kale for a softer green before adding the other ingredients.
Ingredients

cup
cooked quinoa

cups
kale chopped
1
cup
cherry tomatoes halved
1/2
cup
corn
1
scallion chopped
1
clove
garlic minced
zest and juice from 1 lemon
2
T
EVOO
salt and freshly ground pepper to taste
freshly grated Bellevitano cheese or your favorite cheese optional
leave out for vegan version or use nutritional yeast
Instructions
Massage kale with a small drizzle of olive oil. Then add the other ingredients.
Gently toss all ingredients together in a bowl.
