Quinoa Kale Tomato Corn Salad

Ingredients
- 1 cup cooked quinoa
- 2 cups kale chopped
- 1 cup cherry tomatoes halved
- 1/2 cup corn
- 1 scallion chopped
- 1 clove garlic minced
- zest and juice from 1 lemon
- 2 T EVOO
- salt and freshly ground pepper to taste
- freshly grated Bellevitano cheese or your favorite cheese optional leave out for vegan version or use nutritional yeast

Instructions
- Massage kale with a small drizzle of olive oil. Then add the other ingredients.
- Gently toss all ingredients together in a bowl.
