Napa Cabbage, Carrot and Almond Slaw with Honey

- 6 T EVOO
- 2 T plus 2 tsp apple cider vinegar
- 1 T honey
- 1/2 tsp Dijon mustard
- salt
- 2 carrots grated
- 1 head napa cabbage shredded
- 3/4 cup sliced almonds toasted

Instructions
- In a salad bowl, whisk together the olive oil, vinegar, honey, mustard and 1/8 teaspoon salt. Add the carrots, cabbage and almonds and toss to combine.
