Garlic Scape and Green Onion Dressing
This is a great addition to salads or grilled vegetables. I like it over grilled chicken to add some fresh, garlicky flavor. Make ahead to keep in the refrigerator and use as needed.

Ingredients

green onions
coarsely chopped

tsp
honey

tsp
Dijon mustard
or other brown mustard

Tbs
red wine vinegar

Tbs lemon juice
pinch
of sea salt and ground pepper

⁄2olive oil
Instructions
In a food processor, combine the garlic scapes, onions, honey, mustard, red wine vinegar, lemon juice, salt and pepper. Blend until smooth.
Slowly add olive oil and continue to combine. Store in refrigerator or use immediately. Makes 1 cup.
