Garlic Scape and Green Onion Dressing

Ingredients
- 2 green onions coarsely chopped
- 1 tsp honey
- 2 tsp Dijon mustard or other brown mustard
- 4 Tbs red wine vinegar
- 1 Tbs lemon juice
- pinch of sea salt and ground pepper
- 1 cup ⁄2olive oil

Instructions
- In a food processor, combine the garlic scapes, onions, honey, mustard, red wine vinegar, lemon juice, salt and pepper. Blend until smooth.
- Slowly add olive oil and continue to combine. Store in refrigerator or use immediately. Makes 1 cup.
