This recipe is one I took from a Facebook post on our site, that got rave reviews at our Farm Potluck. “I’ll eat eggplant like this!” everyone said. It’s so easy too.
Spray a 13″ x 9″ pan with cooking spray. Then layer eggplant, followed by onions, followed by tomatoes in the casserole dish.
2. Sprinkle mozzarella cheese over the top, and add a bit of salt and pepper. Drizzle a bit more olive oil over the top.
3. Bake in a 400 degree oven for about 30 minutes. (When the cheese looks like it’s starting to brown a bit). Add basil to the dish for the last 5 minutes.
