Eggplant Bake

Ingredients
- 1 eggplant peeled and sliced 1/4" thick
- 1 pint cherry tomatoes halved
- 1 onion chopped
- 1/2 cup mozzarella shredded
- salt and pepper
- drizzle olive oil
- 2 Tbs basil fresh, chopped

Instructions
- Spray a 13″ x 9″ pan with cooking spray. Then layer eggplant, followed by onions, followed by tomatoes in the casserole dish.
- 2. Sprinkle mozzarella cheese over the top, and add a bit of salt and pepper. Drizzle a bit more olive oil over the top.
- 3. Bake in a 400 degree oven for about 30 minutes. (When the cheese looks like it’s starting to brown a bit). Add basil to the dish for the last 5 minutes.
