Found this on a “Meatless Monday” blog, I haven’t made this one before but it’s on my list for the week!
I know you all have some carrots left! Combine them with some sweet potatoes and you’ve got a soup that screams fall…Oh, and even better…this soup can be FROZEN for up to 3 months!
Don’t skip out on the pickled onions, they are such a great addition and only take 30 minutes to pickle!
Make this ahead and store in the fridge for up to 3 days! It’s a great light soup!
Try this different spin on hashbrowns! Add in some onions or scallions!
Get your food processor out for this one!
Another easy roasting recipe!
This one does need to be made ahead, it needs time to chill in the fridge.
These are great with fresh basil, if you use it make sure you leave it off for roasting. Add it after the beans are done cooking, just toss with the roasted beans.
