This makes a HUGE batch of potatoes. Make ahead and warm up throughout the week for a great add on to a scrambled or fried egg!
Don’t skip out on the pickled onions, they are such a great addition and only take 30 minutes to pickle!
Make this ahead and store in the fridge for up to 3 days! It’s a great light soup!
Love our favorite exit strategy, roasting- especially when you use a combo of veggies from your box. The original creator of this recipe recommends microwaving the veggies first, but you DON’T NEED TO DO THAT! Just throw them in the oven and roast until cooked through.
You can always sub in bell peppers if you need to! This is a meal that can be frozen for this winter!
