I LOVE corn salad this time of year…and I DO NOT cook the corn! I’m saving time whenever I can!

I know this recipe calls for tilapia, but any white fish would work. Foil packs are a great way to avoid extra dishes in the summer!

Use this as a side, a dip or on top of tacos! I would consider grilling the corn first, then removing the kernels and making the salad.

A great salad that will use up some of that huge basil plant I know you have growing!
