Love the blueberries in this salad! Fruit pairs well with arugula to off set that peppery kick! I would recommend adding some grilled chicken for a complete meal.
One of my favorites from last year! The ingredients are listed in approximate measurements as salads can vary on preference, sometimes I add a little more dressing, more parmesan as a garnish, etc. This is very easy! I would recommend adding some grilled chicken and avocado to make it into a meal!

If you have a spiralizer than zoodles are a great way to get in more veggies! I light, healthy substitute for pasta, especially when you add in some garlic scapes!
This recipe was a HOT one in our Facebook group last summer! I’m sharing again incase you haven’t seen it! Multiple people have made these and have been successful in gettings those picky eaters to eat those beets! I used regular eggs, milk and an all purpose GF flour and it turned out fantastic.
